On the Menu – Chicken Marsala + Twitter Linkup

Chicken Marsala with Garlic Roasted Potatoes


I am a huge Italian food fan and Chicken Marsala is one of my favorite dishes! The sauce typically includes mushrooms but I omitted them here. I paired the chicken with some yummy garlic roasted potatoes.  The recipe for the Marsala Chicken is quite simple but it presents itself with a savory and delicious taste as though you’ve slaved over it. Ingredients for the Chicken:
6 Thin sliced chicken breasts, boneless & skinless
1/2 Cup flour
Salt to taste
Pepper to taste
Dried oregano to taste
4 Tbsp oil
4 Tbsp butter or margarine
1 Cup Marsala cooking wine

Ingredients for the Potatoes:
3 Pounds white potatoes
1/4 Cup olive oil
1 1/2 Teaspoons kosher salt
1 Teaspoon freshly ground black pepper
5-6 Cloves of garlic
2 Tablespoons minced fresh parsley

Directions for the Potatoes:

Preheat the oven to 400 degrees F. Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.  Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

Directions for the Chicken:

Combine flour, salt, pepper and oregano in a mixing bowl. Coat chicken pieces in the flour, shaking off any excess. Heat oil and butter in a skillet over medium heat. Cook chicken breasts on medium heat for about 2 minutes on the first side, until lightly browned. Turn breasts over to cook other side. Cook breasts about 2 more minutes, until both sides are lightly browned. Add Marsala wine around chicken pieces. cover and simmer for about 15 minutes. Transfer to serving dish with roasted potatoes.
